Speed ratings are absolutely irrelevant unless you have a car that will see speeds above 200 mph. Any decent gripping tire is going to be rated at least V, which is good to 149 mph. Saying you want "at least a Z rating" is like saying you want to finish a class with "at least an A+" ... you can't really do any better.
The Falken Azenis RT615 is probably the best street tire out there. The Hankook Ventus R-S2 is right there with it. There are tires that grip better, but they won't last long with daily use.
