A killswitch is a link inline with a wire to make an outboard on/off switch. Just like a wall switch for the lights in a room. Same concept. Usually inline with the ground or power wire on a fuel pump to create a fuel cut switch or inline with the ignition to create an ignition kill.
Eh, not necessarily...thieves are getting more persistent and smarter. Most use a tow truck so it doesn't matter if you have kills witches.
I would suggest going ahead and getting an alarm put it with multiple tilt sensors and vibration sensors(put at a moderate level, don't be the guy that has his alarm go off every 2 secs).
Kill switches don't hurt though.
There will always be ways to steal a car, even with the above listed, but mainly just be careful of who you deal with as far as buying and selling parts and who you let see your house or wherever your car sits at night.
