VTECs have higher compression ratios across the board. Since VTEC is a fuel saving feature, Honda recommends that it uses the grade of fuel it was designed to use. Using a grade of fuel too low for a high compression engine causes detonation. Octane rating is essentially gas's ability to not detonate. Detonation is when the fuel ignites before the spark. Your risk of this happening increases with compression.

A Honda engine isnt extreme enough to be damaged by using lower grade fuel, but you're not helping your car by running lower grade fuel and on a small level you are doing harm to your engine. If Honda tells you to do it, it's for a reason. It's no accident that theyre the world's leading engine manufacturer.
