If they in fact haven't had any papers for you to sign(verification of employment, tax forms, etc,) you have no leg to stand on.
They'll ask for your g/f verify that she's employed there, and she won't be able to (on paper)
I hope they paid your g/f in checks or another form of payment traceable back to the employer and not in cash.
