Right now they're all doing it that way because they CAN. They've got the upper hand if they're actually hiring. I'll tell you what though... there are PLENTY of restaurants looking for people right now. If you've worked in the business before you should try Gordon Biersch (Buckhead NOT Midtown). They're about to open and I'm sure they have a full staff but when I opened the one in Va Beach half the staff was gone in a month because they couldn't handle it.
