There are multiple factors.....like, bore size, rod length, stroke, etc. Different combinations are going to have different outcomes. Basically, when you are building an engine, you ultimately decide what you are wanting to do with it, and choose accordingly. I think there is just a bigger market for the v8 platform, therefore, you have more options to make multiple combinations.
The point I was trying to make, is that V8's are "unique" in that out of all the different motors out there, the V8 seems to get the highest displacement per cylinder. V6's are pretty close, but even then the 4.3L (one of the biggest I can think of off the top of my head) was only equal in cylinder displacement to a 350 (346). And a 5.7L v8 is about medium size, it's not really that huge.
