You can shoot them one time to stop them from hurting you, its ok to protect yourself, but they also want you to be responsible when doing so.

1 shot=ok

2 or more shots= murder

Personally, If someone pulls a knife on you or any weapon for that matter you should be able to shoot them in self defense. If they keep coming towards you after you put one in them, then you shoot to kill.

I don't know the full story so I can't comment on what happened here. There are always three sides to every story, one being the truth.
That isn't neccessarily true. It isn't automatically murder if you shoot them more than once. If someone is coming at me with a knife and I shoot them once and they keep coming, you can get bet your ass that I'm going to keep shooting (granted, I wouldn't shoot once and pause). Now, the flip side to that is that if you shoot at them once and they start running away, you can't shoot them in the back as they flee. You can do what is neccessary to defend yourself against the threat and if that entails shooting more than once, you are in the clear.
