Once the disc has been made place the disc in the xbox and ship it back to her.
She'll either plug the xbox in and get a nice unexpected surprise or she'll get curious as to what's on the disc and then comes the surprise.
Make sure you change your phone number the day you ship it out to her. This way whenever she has seen all of the footage she'll be irate and want to call and cuss you out but can't. That shit will eat her alive, knowing how pissed she would get and not be able to get in touch with you.
