Softtop. The power hardtop, while convenient, is hideous with the top up. I'm looking at a black/black sport model since they're the cheapest after rebates. It's all about saving money right now.

you also forgot to mention the gas savings... DO IT!

The MPG difference is minimal at best. Also, the MX-5 requires premium fuel while the Mustang can run on swamp-water. It pretty much balances out in the end.
