The jugular is too messy.
1) Sneak up from behind victim
2) Cover their mouth with your hand.
Their initial reaction will be to raise their arms and try to remove your hand.
3) Jam knife up into victim's armpit, severing a critical artery.
Upon removing the knife, you'll be pleased to see that most of the blood will be absorded by their clothing and not splattered all along the wall.
