They don't give it to you covered in parasites IIRC. They clean it and wrap it in newspaper first. Also with a lot of markets like that, with the meat hanging in the open, the owners will actually put maggots on the meat to keep it clean. If it's salted you can leave it for a long time without keeping it cool. But IMO it anything covered in salt tastes like shit.
