Either the cable is adjusted all the way out and the clutch is never disengaging OR your pressure plate bolts aren't tight causing it to bind. I've had both of these happen on different Mustangs of different years... check your cable first and if thats not it then throw that sucker back on the lift.

You need to reset the clutch quadrant. It is what the clutch cable attaches to, under the dash.

Crawl under the dash and see where the cable attaches to the quadrant. The quadrant is two pieces with teeth, and one piece is spring loaded. If you look at it, you can figure it out. It should be yellow or tan color.

does it have an aftermarket quadrant? because if so it can't be reset.

Is it a stock plastic quad or an aftermarket aluminum one? Only the factory style can be adjusted. If you have an aftermarket quad you will need an adjustable cable or a firewall adjuster.
