Greddy, HKS, Borla, Tanabe blue are all good options, Tanabe Blue is the best of the bunch.
Maximal Performance also makes a good exhaust
The GReddy exhaust is REALLY NICE, but was discontinued a couple years ago so you probably won't find that in any stores. I have one in storage that I'm holding on to.
The HKS that looks like the stock exhaust SUCKS bigtime - you're better off keeping the stock exhaust than using that one, but their single shot exhaust (The Super Dragar) is good. But, sadly that one is also discontinued so good luck buying one of those.
ATR was good (I have one on my car) but they're discontinued.
Borla is one of my top picks. It sounds really nice, almost V8-ish in tone.
I've heard a lot of good things about the Tanabe and JIC exhaust. If you have a twin turbo you might also check out Dynamic Racing's exhaust on their website, www.dynamicracing.com - they now have a 3.5" exhaust.
If you're going for performance before sound I'd replace the stock downpipe with an aftermarket before the cat-back. Our downpipes have to be one of the worst designed factory exhaust component I've seen. The rear cylinder's exhaust joins the front cylinder bank's exhaust at a 90 degree T. It's probably the single greatest bolt-on part you can do to a 3000GT in the early stages.
