Time to step up to a DSLR, unless your Kodak camera has a histogram function/feature on the camera. Don't go by just looking at the picture on the screen when it is bright outside. The histogram would of told you it was overexposed by the mountain being pushed all the way to the right. I have to do the same whether indoors or out. It's always easier to fix an underexposed picture in Photoshop vs an overexposed picture. When you overexpose, you lose all detail on everything that is blown out. I bet your camera has some type of histogram feature. Bust out the manual.
