Gloss would look more OEM.
However I think matte would "suit" the car better. Either they buy a bigger roll of matte black (unlikely for such a small order) or find another shop. Sign Shops are a dime a dozen.
Do a matte, than clearcoat = My approval, which as we all know is the most important aspect.
