I threw in some video links for how they sound as well. Good thread!
Four Cylinder - F20C
I must give credit where credit is due. I'm not a huge fan of Honda, but this is quite an amazing engine. Revs for days, 120 bhp per liter with natural aspiration, and it's absolutely bulletproof. There is probably a better engine than this built by Honda, but my knowledge of Honda is rather limited.
Six Cylinder - Arese V-6
Now my bias will show. It's an absolutely beautiful piece of machinery, it sounds incredible, and it was making more power than most V-8s of its time. Did you know Alfa Romeo was the first company to use variable valve timing in production cars? Two other engines I must mention though are BMW's straight-6 engines. No explanation needed...they've used the same design for decades on end and it's never failed them. Also, Porsche's flat-6 engine for the same reason.
Eight Cylinder - Rover V8
The LS series has already been mentioned, so I thought I'd call attention to the Rover V8. This was originally a General Motors design, the Buick 215 engine. It was extremely efficient and quite light, but it was a rather expensive design and it would've been scrapped until Rover bought the rights to the engine and redesigned it. This engine has been used in cars built by Land Rover, TVR, Morgan, and Triumph and has even been used in some light aircraft. It's like Britain's version of the Chevrolet Small Block.
Ten Cylinder - V10 TDI
I like diesel technology and I was blown away by this engine when I saw that it delivered 500+ pound feet of torque and still managed to deliver 25 mpg on a vehicle that weighs 5000 lbs. I don't even like SUVs, but I would buy a Touareg just for that engine.
Twelve Cylinder - AMG V12
AMG has taken the smoothest engine configuration and has turned it into a nuclear weapon. While I like the twin turbo rocket sedans by Mercedes that feature this engine, my favorite application is in the Pagani Zonda Cinque where, in naturally aspirated form, it makes nearly 680 bhp. That's just mind-blowing to me.
Sixteen Cylinders - Bugatti W16
Yea there aren't that many sixteen cylinder engines out there, but I have to call attention to the W-16 which I think is an engineering masterpiece. It's one thing to get 1000 bhp from an engine, but it's quite another to get it in a production car that can be driven daily...oh, and it sounds like a Blackhawk helicopter. Amazing.

The Nissan Sr20 is probably the most capable stock block 4 CYL ever made. 400whp capable w/out cracking the block open. 2.0l, gobs of torque - and rev happy as well. IMO it's the 2JZ of 4 cylinder motors.
Plus, they'll pull a premium 2 weeks before Race Wars.

forget piston engines, 26b quad rotor takes the cake for me, just listen to it http://www.youtube.com/watch?v=S0pm0nlIYLs
and some of them came with their own version of vtec. VVL power!
One difference from Honda's VTEC system is that NEO VVL engages the change of intake and exhaust cams independently for a flatter, more consistent power band. On the SR20VE, the intake camshaft is switched at 5000 rpm, and the exhaust at 6500 rpm. However this trait was not included on the newer '20V' version, as both camshafts engage at the same RPM.

EJ, is there any experimental motors that would could be classed with the rotary, and miller? that made it into production?
I assume you mean Miller Cycle engine so i'm not sure exactly.
One of the latest engines to be off from what's normal is Ilmor Engineering's 5 stroke 700 cc turbo 3 cylinder making 130hp.
http://www.ilmor.co.uk/concept_5-stroke_1.php
I've got a another I just have to mention.
The AJP8 "Speed Eight" was built for the TVR Cerbera and was the first engine developed solely by the company itself. They used to rely on other manufacturers' engines, such as the Rover V8. It's a 75 degree flat-plane crank V8...pretty much a racing engine. It made 360 bhp with 4.2 liters of displacement or 420 bhp with 4.5 liters. It was also very light for a V8, weighing only 267 lbs. Something funny I found out about the development of this engine...they engineered it to backfire loudly while the throttle was disengaged because they thought that was the sort of thing TVR owners would enjoy. Yea, TVRs really are ridiculous cars. Also, the engine looked like it was built by an alien. Difficult to find good pictures of it though. EJ, can you help me out? Hahaha.
This is the best I've got.

I knew about the Cizeta but figured it didn't accomplish enough compared to the rest i posted.
About the AJP8. Since TVR has been in the shit as of late, Al Melling has started his own project building the Wildcat. He was also responsible for TVR'S I6 which i actually like better than the V8 since I6s are a dieing breed.
4. dont really have one but the fe3 is a pretty beefy engine.
6. klde/klze hands down
8. probably any ls series engine.
