If you really really want a 2.0L just get a B20 block and sleeve it. Stroking/Boring a GSR to 2.0 is going to cost a whole lot more and provide just about the same power gains.
You also have to remember longer stroke will reduce your max RPMs thus cutting into the time you have to play in VTEC.
Leave the motor stock stroke, bore it over a little, and use the money you would use on stroking the motor for head work, balancing the bottom end, and forged internals.
