What does head gasket thickness matter?

Thicker headgaskets lower compression, thinner headgaskets raise compression.
I never believed in messing with headgasket thickness, too many problems with it. Always run OEM

You can do it safely. You can buy 2 layer hg's, or take one off yourself, etc... Make sure you check your compression before you do tho. Torque the head right and you should be good.
As Vteckidd said, thick = lower compression... thinner= higher compression
