If she just wants a good DSLR camera and has no interest in photography or shows no interest in learning how to use on then you can get a sony alpha a230, a330, nikon 3000, or canon XS

If she wants to learn how to use a DSLR i would invest in a nikon D90, nikon D7000, or a Canon 60D. They cost more, but arent limited in settings so you will keep them longer, Rather than buying an entry level, selling it and loosing money, and then buying one of the good ones. Plus if she ever decides to get out of it people always are looking to upgrade so resell value would be higher.

canon xsi right now..old enough to be cheap(300ish) and new enough to be relevant

yet if there is not a need to learn the works, an all in one digicam will work better for cheaper. half the price with tones of features that think for you, without having to buy new additional stuff to make it work the way you want it to... gawd I do love the new image sensors on canon's t2+ cameras though. you get what you pay for, but if you pay a bunch and don't learn how to use it, you just paid to look like you have expensive equipment.
