for whatever reason, I was thinking it should have gone faster than 178 on the straight away seeing as how its making 638hp. What do some of the other high performance cars top out at on the Ring? Am I just thinking wrong?

cold tires are probably the culprit there. they probably go all the way abck down almost to sitting temp on the straight.
